Romance Recipes: Winter Whites

Everyone tends to eat just a little more in the colder months and your lover will appreciate some heavenly white edibles!

White Divinity

Divinity is a traditional American Christmas nibble that's sweet, light and oh so good. Here's a good recipe to satisfy that winter hunger together.

Ingredients:

  • 1 cup of water
  • 1 teaspoon of vanilla
  • 1 cup of light corn syrup
  • 3 egg whites at room temperature
  • 4 cups of granulated sugar
  • 1 cup of chopped walnuts (optional)
  • 1/4 teaspoon of salt

Directions:

Combine the sugar, water, corn syrup and salt into a heavy saucepan over medium heat, stirring often until the mixture forms. You'll know when it's formed when you drop a small spoonful into cold water and it forms a small soft ball, then it's ready but unfortunately the other alternative is to use a thermometer. Reduce the heat and keep a close eye on it!

Then beat the egg whites until they are stiff. Next add 1/2 of the corn syrup mixture over the whites and continue beating.

Drop small amounts of the remaining syrup into cold water just like before, if it appears to crackle then it's ready. Pour the rest of the hot syrup mixture over the egg whites; add vanilla and nuts continuing to beat together until the candy holds its shape. Voila! Simply drop spoonfuls onto wax paper and let stand until hard.

White Fudge

White fudge is another famous holiday nibble that's been around for centuries, gracing the many homes of lovers everywhere.

Ingredients:

  • 2 1/4 cup of granulated sugar
  • 1/2 cup of sour cream
  • 1/4 cup of milk
  • 2 tablespoons of butter
  • 1 tablespoon light corn syrup
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla
  • 1 teaspoon of almond extract
  • 1 cup coarsely chopped pecans or walnuts
  • 1/3 cup quartered cherries (candied)

Directions:

First off grease an 8-inch square baking pan and set aside, then combine the sour cream, milk, sugar, butter, corn syrup and salt into a large heavy saucepan. Stir the mixture over a low heat setting until the sugar is completely dissolved then turn up the heat to reach a steady boil reducing the heat again to maintain a very moderate boil. Continuously check the candy by dropping small amounts into cold water until it forms a soft ball. Remove from heat to cool for one hour, then add everything expect the walnuts and cherries and beat until the candy holds its shape. Lastly beat in the cherries and walnuts, immediately spread into the prepared greased pan and let stand until firm.
